Coffee / Tea Applications

Drinking Water Applications

Espresso Applications

Espresso is 85-96% water. Making a good espresso is an art form, but premium filtered water from Pentair Everpure is a great start toward creating the perfect cup.

Brewing a perfect espresso beverage requires proper management of a number of variables, including the grind of the bean, the dosing, the temperature of the water, the brewing pressure, the tamp pressure, the extraction time and the mineral content of the water – and, of course, the blend and roasting of the beans, the quality of the espresso machine and the skill of the barista.

We can help you with the ingredient water component which, unfiltered and out of a tap, is a complex solution of chemicals, organics and minerals, with ranging pH and alkalinity characteristics. Poor quality water can impact espresso beverages in a number of ways:

Scale can cause poor pre-infusion and channeling through the puck, leading to under-extraction and thus a weak drink.
Reduced pressure due to scale buildup can lead to little or no crema.
Chlorine can alter both aroma and taste. It oxidizes aromatics and oils, increasing a beverage’s acidity.
Total dissolved solids (TDS) can cause poor extraction. Under-extraction leads to weak and sour drinks, while over-extraction leads to bitterness.

Fountain Applications

Fountain beverages are 87% water. The right filtration solution from Pentair Everpure® can consistently deliver that “right out of the bottle” taste, fizz and appeal your customers expect.

A fountain drink is typically five parts water to one part syrup (frozen carbonated beverage ratios vary), so around 87% water, and most are served with ice. Since ice is 100% water, that ratio only increases as ice melts in your beverage. Those numbers illustrate just how critical a role clean, high quality water plays in the final taste and smell of a fountain beverage. (And what many do not know is that water quality also affects the performance of delivery and dispensing systems, the balance of water to syrup and the quality of the carbonation).

Water contaminants are the most likely reason for off-tastes and odors in a fountain drink. Municipalities use chlorine or chloramines to disinfect central water supplies and those chemicals oxidize and break down sugars in water. Those reactions produce a range of different compounds that can negatively influence the taste of a beverage, and byproducts that can actually amplify a chlorine or ammonia-like taste. In addition, because free chlorine is a gas, it will dissipate along with the carbonation after a drink is poured, creating a “swimming pool” smell.

Other fountain beverage taste and odor problems caused by water contaminants include:

High total dissolved solids (TDS) can cause weak carbonation and lead to “soft” ice which melts quickly.
Organics such as the algae, molds and bacteria that naturally live in lake and river water sources can cause an “earthy” or “moldy” taste and odor, plus impact beverage color.
Tannins caused by decaying organic matter in surface water will often give beverages a yellowish tint; this is especially noticeable in clear lemon-lime drinks and iced teas.
"Rotten egg smell” that originates from hydrogen sulfide in water which is produced by bacteria in deep wells and in stagnant, low use water mains.

Steam Applications

Steam cooking is an important means for foodservice operators to meet the needs of today’s health-conscious consumers. Also, steam equipment is viewed by staff as easy to use, and chefs appreciate the cooking flexibility and productivity benefits these units afford.

Continuous availability of high quality water is critical to optimal steam equipment operation. If your area’s water is hard, contains chemicals or other contaminants of any significant level, they can coat and corrode the steaming components. Scale buildup and possible chemical carryover can deteriorate steamer performance, negatively impact food quality, and result in premature steamer component failures.

Regardless of whether you use boilerless or boiler-based steam equipment, when water is converted to steam, contaminants are left behind that can cause scale and corrosion. Chorine and chlorides can destroy stainless steel probes and prematurely corrode cabinet racks and surfaces.

Water Pressure Management

As foodservice establishments expand their beverage offerings, the increased water usage can adversely impact operational performance. This, coupled with fluctuating city water flow and pressure, can lead to inconsistent drink quality, poor beverage dispenser performance and premature exhaustion of water filter cartridges.

Pentair Shurflo offers a wide range of water pressure management systems. Our Water Boost Systems elevates the pressure up to 90 psi and stores the water under pressure in an accumulator tank. This ensures that there is enough pressurized water for all beverage system components during peak operating hours when the water pressure in the restaurant is likely to fluctuate. Our pump and accumulator tank systems maintain adequate, consistent water pressure to one or more dispensing valves, and are NSF, UL and CSA listed.

Water Pressure Reducing Valves (WPRV) are devices that are set to specific psi levels, with pressure ranges from 30 to 80 psi. The WPRV should be installed as close as possible to the inlet of the carbonator pump and dispenser.

Water filtration systems have minimum water pressure requirements. Keep in mind that if water pressure is too low, filters will plug prematurely because particulates collect only on the surface of the carbon and will essentially “cake” itself, instead of penetrating deep into the cartridge. It’s important to always put a carbon water filtration system after the water boost to help keep:

• High water pressure flowing to the filter system, which extends the life of the cartridges.
• Chlorine in the bladder of the water boost to prevent growth of algae and bacteria.
